Olive oil is composed of fatty substances called glycerides (97%) and other fatty substances, but phosphorus, such as lipids, lychees, and enzymes (lipase enzyme), which has the ability to analyze glycerides with water to fatty acids and glycerin. Olive oil also contains vitamins A and B, and colored substances such as chlorophyll, zantophyll, aromatic substances, which acquire aroma and special taste. Finally, olive oil contains trace amounts of mineral elements (iron, manganese, calcium), as well as materials in the form of impurities Such as colloidal and resinous substances and a small amount of water. These substances form up to 3% of the composition of olive oil.
